To my understanding, there isn't anywhere to hunt in East Fishkill. I actually don't believe this is the right area of the county to find it, as East Fishkill is part of the more populated zone of Dutchess and those big open spaces away from people aren't here so much.
To find a hunting club, you'd have to head north on the Taconic or out east. In Verbank (Union Vale), there's the Verbank Hunting and Fishing Club. I'd estimate that at about a 20-25 minute drive from East Fishkill. That's just one; I know there are others in the less populated areas of the county such as Dover.
